Let me start of by saying, I did not create this yummy masterpiece banana cake. This is from my friends Mom, but it is so good that I had to share it with you. I am not sure where she got the recipe, but she did make a couple of changes of her own to it. So thank you Mary for this awesome recipe!
Oatmeal Banana Cake, you will need:
1 cup butter-softened
1 1/3 cup lightly packed brown sugar
4 bananas1 cup buttermilk
2 1/2 tsp pure vanilla extract
1 1/2 cups flour
2 2/3 cups oatmeal
1/2 tsp salt
2 tsp baking soda
Stir flour, oats,salt, and baking soda together. In a large bowl, cream butter & brown sugar. Beat in the eggs, then the bananas and vanilla. Beat the flour mixture into the banana mixture. Turn the batter into two greased and floured round cake pans.
1 1/2 cup oats
2/3 cup brown sugar
3/4 cup melted butter
1/2 cup peanuts chopped
Mix the oats, sugar, and nuts then drizzle and mix butter in til evening coated. Put have of the crumb topping onto each pan of batter.
Bake at 350 for 40 to 45 minutes. If you are using an aluminum pan, this may take an additional 10 minutes. Make sure to insert a toothpick and when it comes out clean its done. Cool completely!
Buttermilk Cream Cheese icing & filling:2 (8-oz.) package cream cheese, softened
1/2 cup butter, softened
(6-oz.) powdered sugar
1/3 cup buttermilk
1 1/2 tsp vanilla extract
Once cakes are cooled, place part of this mixture on top of one cake, creating a filling and then stack the cakes and drizzle the rest on top!
Notes from Mary: I added more vanilla to both recipes, (already adjusted in the ingredients above). Buttermilk is essential to this recipe for the cake, oats can make cake and cookies dry the buttermilk gives texture and additional moisture if you substitute with milk expect a much thinner and grainy texture on this cake.
