Crispy Potato Nachos are one of Hubs’ favorite foods. If I had to guess, they would be in his top 5! I like them because they taste so much better with fresh made crispy potato slices, rather than using store bought fried chips.
Crispy Potato Nachos Recipe:
- Ground turkey or beef
- Taco Seasoning
- Beef Stock (or water)
- Red Peppers
- Nacho Toppings, ours included cheese, tomatoes with green chilies, beans, salsa verde, and sour cream
I start by prepping the potatoes because they take the longest! Slice the potatoes thinly, but you want them to be roughly the same so they cook evenly. I wish I had a mandoline for this process, it would be so much easier to make them exactly the same.
