Crispy potato nachos

Crispy Potato Nachos are one of Hubs’ favorite foods.  If I had to guess, they would be in his top 5!  I like them because they taste so much better with fresh made crispy potato slices, rather than using store bought fried chips.

Crispy Potato Nachos Recipe:

  • Ground turkey or beef
  • Potatoes
  • Taco Seasoning
  • Beef Stock (or water)
  • Red Peppers
  • Onions
  • Nacho Toppings, ours included cheese, tomatoes with green chilies, beans, salsa verde, and sour cream

I start by prepping the potatoes because they take the longest!  Slice the potatoes thinly, but you want them to be roughly the same so they cook evenly.  I wish I had a mandoline for this process, it would be so much easier to make them exactly the same.

     I place the potato slices on a cookie sheet, and season with salt and pepper.  Sometimes I will sprinkle some ranch powder on them too, but Hubs prefers them without.  They bake at 400, for about 20-30 minutes.  You want them browned and slightly crispy, (like the first photo)  so they can hold up to the toppings you are about to put on them.
     While they are baking I brown up my meat, which I usually use lean ground turkey, with about 1/2 onion diced and 1/2 a red pepper diced as well.  Once this is all cooked I add my packet of taco seasoning and 1/2 cup of beef stock, and let simmer for 5-10 minutes.
     Once the potatoes are done, create your nachos however you like!  You can see in the top photo, I am using a small plate, where Hubs uses a big one :)  Just one of many differences in our choice of nachos!

  3. These look really good. I'm making some potato crisps tonight. We might have to eat our ground lamb on them this way. Of course, my husband doesn't like anything spicy so have to tweak that part!
