Microwave Cookies: Chocolate Chip-Peanut Butter-Walnut Recipe

I just wanted a cookie!  A peanut butter chocolate chip cookie.  Just one!  Except to make them would mean I would end up with 24 cookies, and a mess in my kitchen that I really did not want.  Plus then I would eat all 24 cookies, I know myself – it would happen.  So I set out to make a tiny batch of microwave cookies!

     I’ve seen other people make individual cakes in a coffee mug on Pinterest, I figured that it couldn’t be too hard to make a cookie!  What I ended up with was 8 small-medium sized cookies, that were pretty good.  They were not as good as out of the oven, I did miss the golden brown cookie bottoms but for taking less than 5 minutes total from Theory to Cleaned up, I was not disappointed.

Chocolate Chip Peanut Butter Cookies w/ Walnuts:

2 Tbs butter – softened
3 Tbs brown sugar – packed
1/4 tsp vanilla
Pinch of salt
1 egg
2 Tbs Peanut Butter
1/2 c Flour
Chocolate Chips and Walnuts
     Super simple!  Just mix butter and sugar together, add vanilla salt egg and peanut butter and mix well.  Then add the flour, once everything is combined add your walnuts and chocolate chips.  Roll into balls and your ready to “bake”.

     These do not spread our much, I put 4-5 on a plate.  Small ones – 1 inch diameter cook in the microwave about 50-55 seconds, a bit larger 70-75 seconds.  It took me longer to get out the ingredients and put them away than to cook all of the cookies!  All microwave ovens are different so just play around and see what yours will do!
