I love fresh baked muffins for breakfast but sometimes it is just so much easier to open a “pouch mix” and add water. That is where my almost homemade recipes come in. Here you can get a taste of homemade, while using some of the pre-made mixes that make life a little bit easier. Using items you already purchase, you can make this tasty muffin for your family!
These muffins are super easy. I have been making them for a while now, but it has been very hot and lately baking has been unbearable. Then yesterday, the skies opened up and the rains poured down in Missoula. With the drop in temps I took advantage and quickly put these muffins together for breakfast the next day.
Chocolate Chip Peanut Butter Muffin Recipe:
1 “pouch” chocolate chip muffin mix
2 Tbs creamy peanut butter
1/2 cup water
The muffin mix I purchase regularly is just a simple mix that calls for a 1/2 cup of water and makes 6 muffins. If your mix is bigger, use the same amount of water in your muffins that the recipe calls for. Mix the peanut butter into the dry mix as best as possible before adding liquid or you will end up with giant clumps of peanut butter in your final muffins and they will not bake evenly. Spray the pan or use baking cups to keep them from sticking. I bake mine for 15 minutes at 350. I pretty much bake everything at 350, it is my favorite setting in my oven. Makes 6 muffins.
