This past week Hubs and I celebrated our Anniversary. It was really nice because this was the first year we were actually together on our Anniversary since we got married. With deployments, field time and Army life in general, something always seemed to get in the way, but this year worked out for us. How did we spend it? Coffee Marinated Pork

A few weeks ago, I came across a marinade for pork chops on Home Cooking Memories Blog and I've been wanting to try it ever since. She made a coffee marinade, without molasses, which I have never seen before. I was waiting to try this recipe for when the Hubs was home, but I am going to give it a try today, even though he is still away. In My Cup

In my cupIn my Mini Press, I put 1.5 Tbs course grind espresso roast and filled with not quite boiling water to let steep for about 5 minutes, before pressing. While that sits, I heated some skim milk on the stove (do not boil). I heated it to about 115 degrees. Then turned the burner to low, added 1 Tbs of sugar and 2 drops of vanilla extract, and fluffed it up with my emersion blender to create some fun froth. I poured the coffee in a mug and then spooned the warm milk over the top. Yum! Continue reading
